A highly selective inert polymer in granular form, characterised by extremely low dustiness and an extraordinary rate of dispersion in water. It acts specifically on the tannic phenols responsible for astringency and, in particular, on catechins and leucoanthocyanins, which are the primary causes of maderisation and oxidative browning linked to polyphenol oxidases. With a flocculation rate up to five times faster than that of traditional protein-based fining agents, it helps to prevent and correct colour and organoleptic alterations in musts and wines without affecting their original structure.
