Highly concentrated pectolytic liquid enzyme, ideal for use in THERMOVINIFICATION and in FLASH DÉTENTE

Thede techniques in addition to positively influencing the release of aromatic compounds, polyphenols and polysaccharides, strongly enhances the extraction of pectin, and consequently the viscosity and turbidity of the juice. The inactivation of natural enzymes caused by the heat and the large quantity of extracted pectin cause clarification difficulties and filtration problems.

Everzym Thermo works in synergy with heat-extraction techniques:
