Among our most valuable partners is ITA-BIO, an ESSECO group company which we collaborate with to conduct research in the field of biotechnological solutions for oenology and fermented drinks.

We work in synergy in both process management selection, production and quality control of yeasts and yeast derivatives, and the study of their application practices.

Project Y-TEAM

In 2015, ITA-BIO and Ever launched the project collaborative Y-TEAM (YEAST – Total Enhancement Advanced Method). This method aims to put together all the professionalism available to create a team specialised in yeasts, in order to propose superior quality solutions to customers and connect them to the world of research. 


Mycoferm

Complete sequencing of all strains in the Mycoferm collection has led ITA-BIO to discover the most interesting genetic variants of each strain, from the capacity to free the thiols from the precursors, to the low production of sulphur dioxide and acetaldehyde. Thanks to a constant process of characterisation, we align the productive destiny of the strain with its genetic heritage.
