Everzym sur lies

Liquid pectolytic enzyme with high ß-glucanase activity and moderate secondary protease and ß-glycosidase activities.

Applications:

• on fine lees accelerates the lysis of yeast and bacteria, reducing the aging time;

• increases the complexity and aromatic impact

• improves the filterability of juices and wines, both in the case of grapes affected by Botrytis and in the presence of complex pectic structures.

It is interesting on:

• fermentation of difficult juices (facilitates clarification)

• sparkling production (perlage, complexity)

• regeneration of filters and cartridges

APPLICATIONS: filtration – evolution of wines –grapes affected by Botrytis.
