The formulation of EVERTANN ROUGE PLUS has been selected for its ability to effectively react with oxygen even when present in very high doses, as it occurs during pressing and racking. It is particularly effective in stabilizing color and in alleviating the astringency of very structured wines. It has a high anti-oxidase action, which manifests itself with a protective effect on musts from the action of polyphenol-oxidase and laccase from Botrytis cinerea.
