\n\t\t\t\t\t\t\t\t\tComplete sequencing of all strains in the Mycoferm collection has led ITA-BIO to discover the most interesting genetic variants of each strain, from the capacity to free the thiols from the precursors, to the low production of sulphur dioxide and acetaldehyde.
