02 October 2019 NEWS FROM HARVEST 2019: MYCOFERM A22 & MYCOFERM M22, SELECTED YEASTS FOR GREAT WINERIES
MYCOFERM A22 and MYCOFERM M22 are the latest news from EVER for Harvest 2019. These yeasts, packed in 10 kg vacuum bags, are dedicated to whom wants ferment big quantities and needs regular fermentation kinetics and low volatile acidities.
 
During this Harvest, we can offer some notes, thanks to excellent results obtained with these selected yeasts from EVER:
 
  1. On BASE WINE FOR SPARKLING PRODUCTION and classic WHITE wines, as CHARDONNAY and PINOT GRIGIO, MYCOFERM A22 has been appreciated for aromatic profile and organoleptic impact on wines.
    The Winemakers, that already racked RED WINES fermented with MYCOFERM M22, as PRIMITIVO DI GIOIA and PRIMITIVO DI MANDURIA, confirmed high alcohol tolerance of this strain and its ability to increase varietal characteristics of grapes.
