What is the stabilizing technique with the lowest environmental impact? 
The analysis of the Stabiwine project has shown that wine refrigeration is the one with the highest impact, while metatartaric acid does not guarantee stability over time. 
Potassium Polyaspartate is therefore the most sustainable solution, chosen by EVER which has designed two micro-granulated formulations to make them soluble in wine, microfilterable and with maximum stabilizing effectiveness. The results of STABILISSIMA S and UP were presented during the webinar "Sustainability from the vineyard to the cellar" on which occasion a new phenolic stabilization technique has been also briefly introduced.
